With expert vineyard management, Cabernet Franc produces superb fruit in a cool climate and the Finger Lakes relatively recent glacial geology has created uniquely interesting sites for its cultivation. Hand-harvested grapes are open-top fermented and then aged for about 18 months in a mixture of oak and produces supple tannins, floral aromas and fill the mouth with ripe berries and cedar.
